So here I had 2 problems.
1) My son, Z doesn’t like to eat vegetables.
He spits out every single tiny vegetable pieces out, he just doesn’t like to eat them.
2) I am not crazy about use icing / frosting. For cookies, muffins or cupcakes…. I know they are popular way to decorate cakes / muffins, but for me, they are a bit too sweet.
Then I came to see a right light, when I ran into this wonderful recipe – SPINACH MUFFINS (kids approved) !!!!!
Any by searching for a lot of inspiration on internet, instagram, youtube…
there is a solution for decoration without using icing and fondant!
Today I’m going to introduce you this awesome and easy recipe, and how-to decorate muffins!

Sweet Spinach Muffins
If you are more familiar with metric system, check this page for conversion.
I used 85gram of Spinach for half portion recipe, then it worked well.
I’ve made this Spinach Muffin twice already, and I usually make half portion of the recipe.
That’s perfect for me as I like to have them eaten fresh within 2-3 days or so.
Here’s my version. I used the recipe in the link, then I added special decoration that kids would love 😁!

This Spinach Muffins are great because….
No Sugar! (they use banana and honey)
So airly and fluffy! Nice texture for biting.
So green, So beautiful.
Easy and Fast. Recipe isn’t complicated at all.
I strongly recommend if you want your kids to eat more spinach! Actually, this muffin is good for everybody!
How to add special decoration to muffins
You wonder how I added decoration?
The answer is…. I used cookie dough!
I used my recipe here: Poop Emoji Cookies (but no sugar or veeeeeery tiny of it )
Then I added food colouring . (Blue and Red)
Here’s the picture of decoration cookies before placing on muffins.
Then you place those cookies on top of muffins and bake.
Mistakes I made…be careful with this. TIPS!
Do not make decoration cookies too big.
Try to make as small as possible.
If cookies are big and covers top of the muffins, it will break cookies… because muffin rises.😵

I tried to make soccer uniform of Japan and Denmark, and I placed them directly on top of the muffins.
…but see ? uniforms and soccer ball got cracks? 🙁
Do not place a cookie on top of the muffins – always on the side, to avoid cracks.
What’s the good size for muffin decoration?
It’s when you actually wonder “maybe they are too small?” is good.
Expect the size to become 1.5 bigger.
Great for School Lunch – takes 3 minutes to make!
Here’s other idea with muffins.
I pack them to Z’s school lunch!
- Spinach Muffins
- Chicken Nuggets (left overs from last night)
- Strawberry & Banana
- Yogurt drink
This took me 3 minutes to make, as I had everything ready 🤩
Those black cat food pics are very handy to use.
They are not only cute, but helps kids eating food tidy because they are easy to hold by hands!

Muffins are great for presents.
Since I had enough muffins to give away, I packed them like this 👇
and put them in friends’ kids locker at kindergarten – as big surprised!
They invited Z and I for a play-date, so I wanted to give something nice as return. 😍
Mother said later : ” Thank you Koko, my kids were so happy and those muffins are already gone!”
